- Prepare the chicken. Place a chicken breast between two sheets of cling film and gently pound it with a rolling pin until it’s an even thickness, about 1.5cm. This ensures it cooks evenly. Repeat with the remaining breasts. Season both sides generously with the salt, pepper, and garlic powder. You’ll see the seasoning cling to the moist surface.
- Sear the chicken to golden perfection. Heat the olive oil in your largest frying pan over a medium-high flame until it shimmers. Gently lay the chicken breasts in the pan—you should hear a vigorous, satisfying hiss. Cook for 4-5 minutes per side, until the underside is a deep, burnished gold and lifts easily from the pan. The smell of browning meat is intoxicating. Transfer the chicken to a plate—it won’t be cooked through yet.
- Build the fragrant base. Reduce the heat to medium-low. Add the butter to the pan. As it melts, it will sizzle gently and turn a light nut-brown. Scrape up any browned bits from the bottom of the pan with a wooden spoon—that’s pure flavour. Add the minced garlic and stir. Cook for 1 minute, just until you can smell its sweet aroma fill the air. Do not let it colour.
- Create the creamy sauce. Pour in the chicken stock. It will steam and bubble up immediately. Let it simmer for 2-3 minutes, scraping the pan, until it reduces slightly. You’ll see the liquid become less watery. Now, pour in the double cream. Stir gently and watch the colour shift from clear to a soft, opaque ivory. Add the dried thyme and oregano.
- Incorporate the parmesan. Turn the heat to low. Add the grated parmesan a handful at a time, whisking constantly with a fork. The cheese will melt into the cream, transforming the sauce into a thick, glossy ribbon that coats the back of a spoon. The smell is now deeply rich and savoury.
- Return the chicken to finish. Carefully nestle the seared chicken breasts back into the sauce, including any juices that have collected on the plate. Spoon some of the sauce over the top of each piece. Cover the pan with a lid and let it simmer gently over low heat for 12-15 minutes. The chicken will finish cooking, absorbing the flavours of the sauce. You’ll know it’s done when the thickest part of the breast feels firm to the touch and the juices run clear.
- Rest and serve. Remove the pan from the heat. Let it sit, uncovered, for 5 minutes. This rest is crucial—it allows the juices to redistribute within the chicken. Sprinkle with fresh parsley just before serving. The final dish should be a study in textures: firm, golden chicken resting in a pool of thick, creamy sauce.
Notes
For best results, use freshly grated parmesan and double cream (heavy cream). Pound chicken to even thickness for uniform cooking. Let the dish rest 5 minutes before serving.
